About the Recipe
A yummy dish with a creamy twist

Ingredients
1 cup coconut water (best if unpasteurized)
1–2 garlic cloves, peeled
1 1/4 cup whole raw cashews
5 Tablespoons fresh lemon juice (1 lemon)
1 teaspoon salt
4 zucchini noodles (spiralize them)
For serving: Zoodles and cherry tomatoes {1 zucchini per person topped with 5 cherry tomatoes sliced}
Preparation
In a high speed blender or food processor, blend together coconut water, garlic cloves, cashews, lemon juice and salt. Blend on high until smooth and creamy.
Warm the sauce in the microwave on 3 minutes
Mix sauce and spiralized zucchini noodles.
Place Zoodles onto a dinner plate, top with sliced cherry tomatoes and top off with cherry tomatoes.
