About the Recipe
. This is a hearty vegan, low carb, low fat and delicious recipe

Ingredients
1 eggplant
1 medium spaghetti squash
1 red, 1 orange and 1 yellow bell pepper
1 tablespoon of capers
2 tablespoons of avocado oil
1 purple onion
1 yellow squash
1 zuchinni squash
1tsp (salt, onion powder, garlic powder, black pepper)
Preparation
Step 1
Pre-heat oven to 400 degrees
Prepare spaghettii squash according to the directions on the label
Step 2
While squash is cooking, cut all the other vegetables with skin on and medium sized chunks. Drizzle olive oil in a preheated skillet and cook veggies. Add capers after veggies are cooked. Season to taste.
Step 3
Once spaghetti squash is cooked and can be scooped out, place on plate and top with veggie mixture.
